Hilu-mur

‘Sweet-bitter’ — fermented spiced sorghum dried into brittle sheets, dissolved into a deep russet Ramadan cordial.

History and culture

Sudan's signature Ramadan drink, made once a year in huge batches: sorghum batter spiced with fenugreek, hibiscus, citrus and cinnamon, fermented, then dried on flat surfaces into sheets kept for the holy month.

Ingredients

  • Dried hilu-mur sheets
  • Warm water
  • Sugar
  • Extra hibiscus & citrus to taste

How it is made

  1. Break the dried sheets into warm water; soak until dissolved.
  2. Strain, sweeten, and chill deeply.
  3. Serve at iftar — russet, sweet then bitter on the finish.
