History and culture

A major Sudanese export crop and the colour of every welcome and Ramadan sunset; the eastern states grow the prized dark calyces.

Ingredients

  • 1 cup dried hibiscus
  • 1.5 L water
  • Sugar to taste
  • Optional: cloves, mint

How it is made

  1. Rinse the hibiscus; steep in cold water 4–8 hours.
  2. Strain deeply; sweeten while warm.
  3. Chill and serve over ice.
