Gongolez / Tabaldi (baobab)

The white powdery pulp of the baobab fruit dissolved into a tart, creamy, vitamin-C-rich drink.

History and culture

From the great tabaldi (baobab) trees of the west that also store water in their trunks; the fruit pulp (gongolez) is a treasured tonic.

Ingredients

  • 1 cup baobab pulp (gongolez)
  • Water
  • Sugar, optional milk

How it is made

  1. Soak the pulp in water until it softens off the seeds.
  2. Stir and strain to a smooth drink.
  3. Sweeten; serve chilled, sometimes with milk.
