Ingredients
- Very fresh lamb liver, lung and tripe
- Onion, peanut butter (dakwa)
- Lime, chilli, salt
How it is made
- Dice the offal very fine while still warm.
- Dress with onion, dakwa, lime and chilli.
- Serve immediately — this dish does not wait.
Preparation notes
Absolute freshness is the whole dish; when in doubt, cook it into kamounia instead.
