Served at weddings and homecomings as a gesture of absolute freshness and trust — only an animal slaughtered before your eyes qualifies.

Ingredients

  • Very fresh lamb liver, lung and tripe
  • Onion, peanut butter (dakwa)
  • Lime, chilli, salt

How it is made

  1. Dice the offal very fine while still warm.
  2. Dress with onion, dakwa, lime and chilli.
  3. Serve immediately — this dish does not wait.

Preparation notes

Absolute freshness is the whole dish; when in doubt, cook it into kamounia instead.
