Dam‘a (tomato-meat stew)

Dam‘a is the plain, beloved everyday stew — the meat dish most Sudanese grew up eating over rice or gurraasa.
Ingredients
- 500 g meat, cubed
- 2 onions, 4 tomatoes
- Garlic, tomato paste
- Cardamom, black pepper, salt
- Oil
How it is made
- Fry onion until golden; add meat and brown.
- Add garlic, tomato and paste; cook down.
- Add water, cardamom and pepper; simmer 45 min.
- Reduce to a thick sauce; serve over rice or gurraasa.
