Dam‘a (tomato-meat stew)

Dam‘a is the plain, beloved everyday stew — the meat dish most Sudanese grew up eating over rice or gurraasa.

Ingredients

  • 500 g meat, cubed
  • 2 onions, 4 tomatoes
  • Garlic, tomato paste
  • Cardamom, black pepper, salt
  • Oil

How it is made

  1. Fry onion until golden; add meat and brown.
  2. Add garlic, tomato and paste; cook down.
  3. Add water, cardamom and pepper; simmer 45 min.
  4. Reduce to a thick sauce; serve over rice or gurraasa.
