Shared across the Sudanese-Egyptian table, mahashi is a patience dish — the proudest thing a home cook sets down for guests.

Ingredients

  • Courgettes, aubergines, peppers, vine leaves
  • 2 cups rice, 300 g minced meat
  • Tomato, onion, dill, mint, spices
  • Tomato broth to cover

How it is made

  1. Core the vegetables; blanch vine leaves.
  2. Mix rice, meat, chopped tomato, herbs and spices.
  3. Stuff loosely; pack upright in a heavy pot.
  4. Cover with tomato broth; braise gently 1 hr.
