Tamarind (aradeb) is compressed into blocks and traded across Sudan; steeped, it becomes a beloved Ramadan cooler.

Ingredients

  • 1 cup tamarind pulp
  • 1.5 L water
  • Sugar to taste

How it is made

  1. Soak tamarind in warm water until soft.
  2. Work through a sieve to remove seeds and fibre.
  3. Sweeten and chill; serve cold.
