Agashe (spiced skewers)
Beef or liver skewers rolled in a fierce dry rub of peanut, chilli and spice, grilled fast over flame.

History and culture
A West-African-influenced street classic (kin to suya), agashe carries the peanut-forward dakwa rub that also defines Sudan's salads.
Ingredients
- 600 g beef or liver, thin strips
- 4 tbsp ground roasted peanut (dakwa)
- 1 tbsp chilli, cumin, garlic powder
- Oil, salt
How it is made
- Thread meat onto skewers; brush with oil.
- Press on the peanut-chilli rub.
- Grill over high flame, turning quickly, 6–8 min.
- Dust with more dakwa; serve with sliced onion.
