History and culture

A West-African-influenced street classic (kin to suya), agashe carries the peanut-forward dakwa rub that also defines Sudan's salads.

Ingredients

  • 600 g beef or liver, thin strips
  • 4 tbsp ground roasted peanut (dakwa)
  • 1 tbsp chilli, cumin, garlic powder
  • Oil, salt

How it is made

  1. Thread meat onto skewers; brush with oil.
  2. Press on the peanut-chilli rub.
  3. Grill over high flame, turning quickly, 6–8 min.
  4. Dust with more dakwa; serve with sliced onion.
