Sudan's principal cereal and the grain behind kisra, aseeda and much local beer; drought-tolerant and ancient.
History and culture
Domesticated in the eastern Sahel thousands of years ago, sorghum (dura) is the staple that fed Kush and still anchors the Gezira and rain-fed farms today.
Culinary uses
Kisra, aseeda, hilu-mur, marisa (traditional brew), animal fodder.
Nutrition
Gluten-free complex carbohydrate, rich in iron and fibre.
