Mullah rob

The archetypal Sudanese stew: dried okra powder and fermented milk (rob) thickened around meat, scooped with kisra.

History and culture

‘Mullah’ names the whole family of Sudanese stews. Rob — soured milk — gives the central-Sudan version its signature tang; every household keeps its own balance of okra, spice and fat.

Ingredients

  • 500 g meat, cubed
  • 3 tbsp dried okra powder (weika)
  • 1 cup fermented milk (rob)
  • Onion, garlic, tomato
  • Spices, salt

How it is made

  1. Brown meat with onion, garlic and tomato.
  2. Add water and simmer until tender.
  3. Whisk in okra powder to thicken; add rob.
  4. Simmer gently, adjust salt; serve with kisra.

Variations

Weika (dried okra, no milk), tagalia (fried onion base), sabaroag (dried leaves).
