Moukhbaza

The Beja east's signature: hot flatbread pounded with ripe banana into a sweet, steaming mash, sharpened with chilli and honey.

History and culture

In the tea houses of Kassala and Port Sudan, moukhbaza is breakfast, dessert and welcome at once — Beja hospitality in a single bowl.

Ingredients

  • 2 fresh flatbreads, torn hot
  • 3 ripe bananas
  • Honey, a little chilli
  • Sesame oil or ghee

How it is made

  1. Pound hot bread and banana together to a rough mash.
  2. Work in a spoon of ghee or sesame oil.
  3. Finish with honey and a breath of chilli; eat hot.
