Herding country cooking: where cattle and sheep are wealth, the fat itself is the luxury, stretched with weika into a stew for kisra and aseeda.

Ingredients

  • 150 g sheep's tail fat
  • 3 tbsp weika (dried okra)
  • Onion, garlic, chilli
  • Salt

How it is made

  1. Render the fat gently with onion.
  2. Add garlic, chilli and water; bring to a simmer.
  3. Whisk in weika; cook to a glossy stew.
