The dawn restorative of market porters and long-distance drivers — kawari houses open before sunrise and sell out by mid-morning.

Ingredients

  • 2 cattle trotters, cleaned
  • Onion, garlic, cardamom
  • Salt, lime, chilli to serve

How it is made

  1. Boil the trotters, skimming, 3 hours until the broth is silky.
  2. Season with salt and cardamom.
  3. Serve very hot with lime, chilli and bread.
